MARINATE
- 450 g boneless chicken breast
- 1 tbsp. soy sauce
- 1\4 tsp. Chinese salt
- 1\4 tsp. white pepper
- 1 tsp. vinegar
- SAUCE :
- 1\2 cup chicken stock
- 1 tsp. corn flour
- 1 tsp. soy sauce
- 1\4 tsp. Chinese salt
- 4 tbsp. clear honey
- 1 tsp. brown sugar
- 1\4 tsp. white pepper
- 1 tbsp. sesame seeds
1.Wash and cut chicken into 2 inch strips.
Marinate the chicken with salt, pepper, vinegar and soy
sauce for about 20 minutes.
2. Heat oil in a wok and fry the marinated
chicken until the chicken is tender. Drain.
3. Place the chicken in a wok. Add Soya sauce.
brown sugar, honey and chicken stock, salt and pepper.
4. Bring to boil, stirring constantly, simmer
for 3-4 minutes or until all the moisture has evaporated and
thick coating of sauce has formed over the chicken. sprinkle
with sesame seeds, stir once and transfer to a serving dish.
5. Serve with plain or fried rice.

Running
short of chili sauce?
Make a quick sauce at home! Put a little chili pickle in the
mixer and grind for 2-3 minutes to obtain a smooth paste.
Add this paste instead of chili sauce to the dish.

Osteoporosis

|
What is it?
Osteoporosis is a weakening of the
bones, that can lead to breaks which are
difficult to heal.
Bones are made up of a thick outer shell
with a honeycomb mesh inside.
Osteoporosis occurs when the gaps in
this honeycomb become bigger making the
bone fragile and brittle causing them to
break easily. The wrists, hips and spine
are particularly at risk. What causes
it?
During childhood and the teenage years
the skeleton grows and develops, with
the bones getting longer and the
internal mesh becoming more dense until
they achieve their greatest density when
a person is in their late 20s.
A natural part of the ageing process is
that bones get weaker in people over 30
and the honeycomb becomes less dense.
However, in some cases this occurs
faster than in others leading to
osteoporosis.
A poor diet in youth can also lay the
foundations for the disease in later
life.
Who gets it?
Women are particularly at risk because
they have smaller more fragile bones to
start off with.
This is complicated by the menopause
during which the body stops producing
oestrogen - a hormone essential for good
bone health.
And because of the natural ageing
process, the risk increases with age.
However, more and more research is
indicating that the disease can affect
younger people, with the National
Osteoporosis Society reporting an
increase in incidence of the disease
among young women, particularly those
who are underweight or who have suffered
anorexia.
How can it be prevented?
Diet and exercise are the two key
preventive measures.
The Chartered Society of Physiotherapy
says skipping, jogging and aerobics are
the best exercises to beat the disease.
A high calcium, well-balanced diet
throughout life but especially while the
body is still developing is recommended.
Dr Nicola Keay, an osteoporosis
researcher who has studied the effect of
the disease on young women, said there
were dangers in failing to find a
balance.
"If you're doing too much exercise or
don't eat enough, or if you don't do any
exercise and eat lots of fast food,
those extremes obviously aren't good,"
she said.
"The message is to get a balance - do
enough exercise, eat a reasonable diet
and don't go on a crash diet at 10 or 12
worrying about being too fat because
it's the worst thing you can do for your
bones."
What is the treatment?
Gentle exercise can help those who are
already suffering the disease but have
not yet suffered any fractures to
rebuild bone strength.
Drug treatments can help restore levels
of oestrogen in those who have stopped
producing it, or target it to where it
is needed in people who have low levels
of the hormone.
These therapies include including
hormone replacement therapy, oestrogen
derivatives and a new generation of
drugs known as selective oestrogen
receptor modulators.

Youth
'cannot live' without web |
|
A survey of 16 to 24 year olds has found that 75% of them
feel they "couldn't live" without the internet.
The
report, published by online charity YouthNet, also found
that four out of five young people used the web to look for
advice.
About one third added that they felt no need to talk to a
person face to face about their problems because of the
resources available online. The findings will be unveiled at
the Houses of Parliament on Wednesday.
Despite high-profile examples of internet security breaches,
such as the recent incident of phishing email scams, 76% of
the survey group thought the internet was a safe place "as
long as you know what you're doing".
"Probably the middle-aged are the most vulnerable," said
Open University psychologist Graham Jones.
"I think children, teenagers and people under their mid-20s
have grown up with technology and they understand it deeply.
"So-called silver surfers have got time to learn about it
and understand it as well. One of the biggest problems for
children is not that they are vulnerable but that their
parents don't know what they're doing."
'Digital natives'
The survey, funded by the Nominet Trust - a charity that
encourages the safe use of the internet - looked at how the
web influences the well-being of people aged between 16 and
24.
Its author, Professor Michael Hulme of Lancaster University,
names this age group "digital natives" as they have grown up
in an environment rich with computer and mobile technology.
"For young people the internet is part of the fabric of
their world and does not exist in isolation from the
physical world," he said.
Youthnet, set up by the broadcaster Martyn Lewis in 1995,
runs websites offering advice, information and volunteering
opportunities to young people.
"The need for a safer, trusted [online] place has never been
greater," said Fiona Dawes, Youthnet's chief executive.
"Youthnet will be taking the insights of this report to
heart as we plan the future of our services."

WAVES
Assalam-O-Aaliakum!
Fellows, how many of you have seen sea? I guess most of you.
Do you notice the waves in the sea- their rise and fall.
They have their crest and trough. Waves are made up of water
particles and the position of each water molecule that makes
the wave changes as the wave moves on. No particle stays
stationary. One time it is in its peak position and few
moments later it is in the dip.
Life is like a wave. Each of us has up and down moments. No
one in this world has ever come without his set of
challenges. We are deluded to believe that happiness comes
with money. If so happened, then the rich people with things
would be happy. But their money doesn’t fetch them
happiness. Yes, poverty can be a cause of unhappiness but
that is no proof that only money can bring pleasure to one’s
life.
Every one’s life has its own sets of challenges and
pleasures. Life is full of stuff. Like waves, you cannot
stop it. But you have a choice of the way you deal with it.
You can be the one that toss and let be turned by waves. Or
you can be the one that takes each thing that life throws to
you and enjoy it like the sea surfer having fun riding on
the waves. Or you can be like the submarine that ride deep
beneath the ocean and stays at peace even when there is
storm raging in the sea. Some who fail to understand the
nature of waves end up drowning.
Can you stop the waves in the ocean? You can't because it's
the nature of the ocean. Likewise you cannot stop the waves
in the sea of your life. All you can do is decide how to
handle the waves of your life.
Give it a thought. You don’t want to be tossed and drowned.
Attempting to surf can be fun but what if you get tired? The
best way is to calm your inside, so that like a submarine,
you can ride deep beneath the waves. Once you have peace
within you, you will be saving your energy from drainage and
will find in you more potential to handle life’s challenges.
