Chili Tacos

- 1 large green bell pepper
- 1 onion, peeled and chopped
- 3-4 garlic cloves, minced
- 450 g. lean minced beef

- 450 g. can chopped tomatoes
- 1 tbsp. tomato puree
- 11\4 cups  water
- 1 tsp. chilli powder
- 1\2 tsp. cumin powder
- Salt and pepper

400 g. can red kidney beans, drained and rinsed
- 8-10 taco shells
- 150 g. Cheddar cheese, grated
- Shredded iceberg lettuce, chopped tomatoes and sliced olives for topping
- soured cream

1. Halve, deseed and chop the bell pepper. Place the onion, garlic, bell pepper and mince meat in a medium heavy based sauce pan and cook over medium-low heat, stirring, until the vegetables are soft and mince is brown.  
2. Add tomatoes, tomato puree, water, chilli powder, cumin, salt and pepper. Cover and simmer for 12-15 minutes, stirring occasionally.
3. Add kidney beans and cook for another 15 minutes or until the all the moisture has evaporated.
4. Just before serving, heat the taco shells in moderate oven for 3-4 minutes or until crisp. 
5. Spoon a little of the mince mixture into each taco shell. Top with chopped tomatoes, shredded lettuce, olives and grated cheese. Serve with sour cream.
6. Serves: 4-5


Peaked cake?
Peaked top in a cake could be because of too much gluten being developed in the mixture either due to using too hard a flour or by overbeating. It could also be due to oven temperature being too high

Sensitivity to aspartame probed

Scientists are to assess whether the artificial sweetener aspartame causes health problems in people unusually sensitive to it.

Expert advice is that aspartame - found in more than 4,000 products - is safe to consume.
However, a number of people have reported sensitivity to the product including headaches, dizziness, vomiting, diarrhoea and fatigue.
The University of Hull study is funded by the Food Standards Agency (FSA).
Aspartame, 150 times sweeter than sugar, is found in products such as diet soft drinks, cereal bars, yogurts and chewing gum.
There have long been concerns that the sweetener is linked to a raft of health problems, including a greater risk of cancer, fertility issues, nausea, double vision and an effect on appetite.
However, after reviewing the available scientific literature, both the FSA and the European Food Safety Authority decided there was no firm evidence of any impact on health, and ruled that aspartame was safe to consume.
Professor Stephen Atkin, who will lead the new research, said: "This study is not to determine whether aspartame can be consumed safely; this has already been established, but rather to see whether certain people are sensitive to it."
The Hull team hope their work will lead to a larger international study to pin down the issue once and for all.
Body chemistry
Professor Atkin also hopes to secure funding to analyse the chemical breakdown of aspartame in the body.
The sweetener can be broken down to produce methanol and formaldehyde, both of which have been previously linked to cancer.
However, it is not clear whether this process takes place in the body, or, if it does, whether the metabolites are absorbed into the blood in sufficient quantity to produce any biological effect. Andrew Wadge, Chief Scientist at the Food Standards Agency said: "The study will address consumer concerns, including anecdotal reports that have linked a range of conditions to aspartame.
'The Agency's view remains that aspartame can be consumed safely and we are not recommending any changes to its current use.
"However, we know that some people consider that they react badly to consuming this sweetener so we think it is important to increase our knowledge about what is happening."
One hundred people will take part in the Hull study, half of who have complained of side effects from aspartame.
The study is expected to take 18 months.
At present the Acceptable Daily Intake (ADI) for aspartame is set by the European Commission's Scientific Committee on Food (SCF) at 40 milligrams per kilogram of body weight.
An adult would have to drink about 14 cans a day of diet soft drink, or consume about 80 sachets of sweetener to reach this amount.

Confucius was China’s most famous Philosopher. He lived in Ancient China during the Zhou Dynasty. Confucius was a government official, and during his lifetime (he lived from 551 to 479 B.C. ) he saw growing disorder and chaos in the system. Perhaps due to the turmoil and injustices he saw, he set himself to develop a new moral code based on respect, honesty, education, kindness and strong family bonds. His teachings later became the basis for religious and moral life throughout China.
The Five Virtues of Confucius
Confucius believed that a good government was the basis for a peaceful and happy society. And the basis for a good government was good officials. In order to become a “good official” a person had to master the following Five Virtues:
Men's natures are alike, it is their habits that carry them far apart"
“Forget injuries, never forget kindnesses”

“The superior man is modest in his speech, but exceeds in his actions”
“When we see men of a contrary character, we should turn inwards and examine ourselves”
To see what is right, and not do it, is want of courage”
Confucius and Family Values
Confucius believed that strong family values and relationships were key to a stable society. Mutual respect and family loyalty were central to Confucius teachings.
This extended to the living as well as the deceased. Paying respect to the ancestors has become an important Chinese tradition.
He also stressed the importance of seniority: The old educate the young, and the young respect the old.
“Let the prince be a prince, the minister a minister, the father a father, and the son a son”  

On Knowledge and Education
Confucius was a member of the upper class, but he believed education and knowledge belonged to anyone who had the desire to learn. He opened a school in his home, and legend has it, some of his poorer students lived with him.  He insisted on honesty, hard work, and teaching by example. He taught through conversation, by asking questions and expecting his pupils to find their own answers.
He wanted to prepare his students for public service, to develop compassion and respect for others.

Assalam-O-Alaikum!
Friends, I hope you all are doing well and enjoying the extended vacations.
A month ago, our family went for picnic to one of the city’s suburb. The spot we choose was a little far from the main road. Just as we were returning, our car broke down on the way. We were quite some miles from the main road. I had to trek those miles with my husband to get to the main road to be able to find some help. I kept wailing and complaining of our old car all the way through. Finally we got help and our car was taken to workshop. To get back home, we took bus. During the bus ride I kept cursing the luck. My mood was too cross after the tiring walk, that I did not care to reply to salutations of the passenger beside me. The passenger next to me was a happy-go-lucky type of pretty woman, who seemed quite contend with life. When the bus reached the stop, she pulled the crutch and hobbled down the bus. That moment, I realized, Oh my Lord, how ungrateful I have been. This lady doesn’t have a leg. Yet she has no complains with life and what life offers her. It was a moment of repentance for me. I felt so ashamed. Lord has blessed me with so much. I have a car to ride in. And if it did break down, I have legs to walk with. I immediately did ‘tobah’, and thanked Allah for blessing me with so much.
My fellow friends, the reason to share this with you is that often I hear students complaining of the walk they have to do their cars/vans before and after school time. Due to traffic jams and some other security reasons, vehicles are not allowed to be parked next to schools’ gates. Why shall we cry on these petty issues? Instead this shall be the time for us to thank God for giving us enough strong legs that can carry us. Further, walk is so beneficial for our health. It is a good exercise and strengthens our muscle.
So be happy and try to adopt a positive approach to life. Stop complaining and start thanking.
