Mutton Pulao
B.j Signature Recipe

- 500g lamb meat on the bone, cut into pieces.
- 5 cloves
- 1 tsp. black pepper
- 1 inch cinnamon stick
- 1 tsp.
coriander seeds
- 4-5  large cardamom

- 1 tsp. cumin seeds
- 2 bay leaves

- 2 tsp. salt
- 1 small onion, peeled and sliced
- 1 inch piece ginger, roughly chopped

- 400g  Pakistani basmati rice

For Masala
- 1/2 cup ghee or cooking oil
- 1 large onion skinned and sliced  
- 1 tsp. black peppercorn
- 1 inch cinnamon stick
- 3 large cardamoms
- 1tsp. cumin
- 6 cloves

- 1 level tbsp. fresh gingerpaste
- 1 level tbsp. fresh garlic

This is an easy way to make rice more exciting. Typically, Pakistani Basmati rice would be the best, the aroma is unbeatable, but use whatever white rice is available.

Wash meat thoroughly under cold water tap. In a large heavy based saucepan place the meat, spice, salt, onion, ginger, garlic, bay leaves and enough water to cover the meat 2 inches. 
Bring to boil and skim off any scum that rises to the top. Reduce the heat, cover and allow to boil gently for 40 to 45 minutes until the meat is tender.
Meanwhile, put the rice in a sieve and wash it thoroughly under running cold tap until the water runs clear. Soak in plenty of water for 30 minutes. Drain in a sieve and let it stand for a minute or two.
Strain the meat and the spices. Reserve the stock. Discard the spices by taking out the meat pieces from it.

Heat the ghee or oil in the heavy base pan and add the onion, stir frequently, fry to a golden color. Add spices, fry for a minute, add meat, ginger and garlic. Stirring frequently, fry this over medium heat for 5 to ten minutes until the meat turns a rich golden color.
While the meat is cooking, measure the stock, it should be 3 1/2 cups. If it is less add more water to make it to required. Add stock to the meat and bring to boil. Place  drain rice in it and parboil for 5-8 minutes or until rice are 3\4 cooked. Cover with a tight fitting lid, reduce heat to very low and allow to cook for another 7 - 10 minutes until rice is tender.
Fluff up the rice with a fork, then transfer it into to a heated serving dish.
Serve with

ink from any hard surface, spray it with deodorant and rub hard with a soft cloth.

Coffee & Tea Protect Your

Drinking several cups of tea or coffee a day appears to protect against heart disease, a 13-year-long study from the Netherlands has found.
It adds to a growing body of evidence suggesting health benefits from the most popular hot drinks.
Those who drank more than six cups of tea a day cut their risk of heart disease by a third, the study of 40,000 people found.
Consuming between two to four coffees a day was also linked to a reduced risk.
While the protective effect ceased with more than four cups of coffee a day, even those who drank this much were no more likely to die of any cause, including stroke and cancer, than those who abstained.
The Dutch tend to drink coffee with a small amount of milk and black tea without. There have been conflicting reports as to whether milk substantially affects the polyphenols - believed to be the most beneficial substance in tea.

Coffee has properties which could in theory simultaneously increase and reduce risk - potentially raising cholesterol while battling the inflammatory damage associated with heart disease.
But the study in the Journal of the American Heart Association finds those who drank between two and four cups a day lowered the risk of the disease by 20%.
"It's basically a good news story for those who like tea and coffee. These drinks appear to offer benefits for the heart without raising the risk of dying from anything else," said Professor Yvonne van der Schouw, the lead researcher.
Ellen Mason, Senior Cardiac Nurse at the British Heart Foundation, said: "This study adds further weight to the evidence that drinking tea and coffee in moderation is not harmful for most people, and may even lower your risk of developing, or dying, from heart disease.
"However, it's worth remembering that leading a healthy overall lifestyle is the thing that really matters when it comes to keeping your heart in top condition.
"Having a cigarette with your coffee could completely cancel any benefits, while drinking lots of tea in front of the TV for hours on end without exercising is unlikely to offer your heart much protection at all."

Hope the scorching heat of summer sun is not marring your spirits. Indeed it is roasting hot these days in this part of the world. May Allah have mercy on us. Ameen.
The other day, I was in line waiting for my turn to get my grocery billed, when a thought struck me.  I pondered on the essentials for my daily survival. I have to breathe to be alive. Air is free. Had it not been, Godforbid, we would be walking around with our air supply tank on our back, cautious to keep a check so that when it runs low, we get it refilled in time. And what if refill stations were on strike, or if air price would go beyond the reach…Oh! the thought scared me and I thanked Allah for blessing with fresh supply of air without any charge. And as I thought more, I realized that many of those blessings which I need for my survival were free. Ability to see, smell, taste and hear, the proper functioning of the body, I do not have to pay for them. Allah has blessed me with properly working digestive system, there are no charges on the good night’s sleep that I have. And as I thought more...the list of these blessings seemed endless.
By that time it was my turn to have the grocery billed. And as I took the money from my purse to pay for the purchased items, I wondered what if these things so essential for survival were in hands of some human being. That’s scary too. I walked out of the shopping mall, thanking Allah for not making me to pay for the blessings I depend on for my daily survival and also for not keeping them in the hands of some human beings.
Folks, many a times we become too thankless. Let us keep our focus on Allah’s infinite blessings and thank Him for them. The list of His blessings is endless. I am sure you can think of more yourself.  Give it a try.
