- 3 Roasted baray pai(cow's trotters)
- 2 kg. bone with
marrow
- 4 kg. bong
(shank)
Ingredients For Stock
- 3 medium
onions, skinned and roughly chop
- 3 garlic bulbs,
skinned and ground
- 2 inch piece
ginger peeled and ground
- 1 inch cinnamon
stick
- 12 cloves
- 1 tbsp. whole
black pepper
- 6 black
cardamoms - 4 liter water
Ingredients For Gravy
- 4 onions
skinned and thinly sliced
- 3 tbsp. ground
garlic
- 2 tbsp. ground
ginger
- 2 tbsp.
coriander powder
- 2tbsp. chili
powder
- 2 tbsp. garam
masala
- 1\2 tsp.
turmeric powder
- 2 cups oil
1. If roasted pias are not
available. Roast them over open gas flame.There is a bunch of hair between the hooves. With a
sharp knife make a long cut between the hoff and carefully
remove hair.
2. Wash the pai thoroughly under running tap
and scratch any burnt part with a sharp knife.
3. Place pai and all the ingredients for stock
in a large heavy based sauce pan. Bring to boil, reduce the
heat, cover and allow to boil gently for about 3-4 hours
until the meat is almost tender. (The process can be speeded
up in a pressure cooker. Use half the quantity of water.
Follow the manufacturer's instructions for timing. note: It
will take at least 1 1\2 hours in a pressure cooker.)
4. Meanwhile prepare the gravy. Heat oil in a
large heavy based pan and add sliced onions. String
frequently fry for 5-8 minutes until the onions are
transparent and soft but not brown. Add the garlic and
ginger paste and continue frying for another few minutes.
Add a little stock to prevent the mixture from sticking to
the bottom. Add the turmeric, chili powder, coriander
powder, garam masala and salt. Stir fry for another few
minutes. Add a little more stock if the mixture sticks to
the bottom of the pan.
5. Remove pais from the stock and add to the
gravy. Add 1\2 cup stock and stirring frequently fry for 10
-12 minutes. Add little more stock to prevent the mixture
from sticking. Turn off the fire, carefully remove the pai
from the gravy, and put them back in the stock. Place it
over medium flame and bring to boil, reduce the heat to low.
Cover and cook until the pai are very tender and soft and
about 8-10 cups of soup is left.
6. Reheat the gravy, add meat to it and
stirring frequently fry for 12-15 until the meat is well
browned. Add little water if while frying meat stick to the
bottom of the pan. Add 4 cups of water to the meat,
cover and cook over low heat (stirring occasionally) until
the meat is tender and oil begins to separate from the
gravy. Turn off the fire.
7. When the pais
are very tender and soft, add beef mixture to it. Carefully
stir once and cook for another 5 minutes. Don't over stir
otherwise the meat pieces will break. Serve hot with
Nan
or boiled rice.
Potato

Potato peels can be made into tasty wafers. Immerse the peel
in warm water to which a pinch of salt is added and then dry
it. Deep fry till crisp and you have delicious potato
wafers.
Almost 95% of the
world's population is not protected by
laws banning smoking, the World Heath
Organisation says.
In its second major
report on the "tobacco epidemic", the UN
agency said second-hand or passive
smoking killed nearly 600,000 people
each year.
The WHO said seven new
countries passed comprehensive
smoke-free laws in 2008, taking the
world total to a mere 17.
It warned that tobacco
is still the leading preventable cause
of death, killing five million people
every year.
"Unless urgent action is
taken to control the tobacco epidemic,
the annual death toll could rise to
eight million by 2030," the WHO report
said.
In 2008, an additional
154 million people were newly covered by
smoke-free laws enacted in seven
countries - Colombia, Djibouti,
Guatemala, Mauritius, Panama, Turkey and
Zambia.
But that still meant
only 5.4% of the world's people were
protected, the report said.
The agency urged
governments to implement the 2005 WHO
framework convention on tobacco control,
which 170 nations have signed.
The convention urges
countries to adopt measures to prevent
smoking - by offering people help to
quit, enforcing bans on tobacco
advertising and raising tobacco taxes -
and to protect non-smokers from tobacco
smoke.

functional

will be recognized by NAEAC like MBBS degree program is
accredited by PMDC.
The National Agriculture Education Accreditation Council (NAEAC)
established by the Higher Education Commission [HEC] in 2007
has become functional now.
The establishment of the Accreditation Councils is a major
step towards improving the quality and bringing it at par
with the international standards. Accreditation is both
about quality assurance and quality improvement.
Accreditation process determines the minimum acceptable
educational standard.
All agriculture degree programs offering by Public /Private
Sector institutions fall under the purview of NAEAC
including: Agronomy and Crop Physiology, Plant Breeding and
Genetics, Agricultural Entomology, Agricultural/ Plant
Pathology, Forestry, Range, Management and Wildlife,
Horticulture, Soil and Environmental Science, Agricultural
Economics, Marketing and Agribusiness, Food Science and
Technology, Agricultural Education and Extension, Animal
Science, Weed Science, Plant Protection
Additional emerging disciplines and degree programs

Dear CP Team, I am glad that you
and CP newsletter is back. No doubt you have been doing an
excellent job for the Pakistani Community since 97. I am
your regular reader and have benefited a lot from your
counsels and guidance in so many fields.
You know now a days our beloved country Pakistan under the
terrorists attacks. Similarly what is going in Baluchistan,
Swat and Fata and Pata. This is not the war which could only
be fought by our army. We must support them and do what ever
we could do in this regard. The basic thing in my mind is to
educate the people to give them correct thinking about
Islam. What is being done on the name of Islam is nothing
but an Indian Jewish lobby conspiracy against Pakistan.
I would request you to think over it and start some program
in the Cp issues on this topic and let us get together and
help our country get out of this dangerous game. My best

In Yourself Assalam-O-Alaikum!
Folks, hope you all are enjoying the
pleasant mild winters.
Sometimes in our life, we find ourselves caught in a
quagmire of difficulties. We feel distressed and wonder what
we did to be put in such a condition. But it is often these
tough times, when man struggles to find his way out and
comes to know of many of his hidden talents that he himself
was oblivious to.
When we read the autobiographies of successful people, we
come to see that it was trust in their inner self that kept
them going through all challenges. Having faith in yourself
means the ability to recognize the value of your talents,
your worth and your contribution to the rest of the world.
It is important to have confidence in yourself because if
you don't believe in yourself, then it will be impossible to
truly believe in anything else that you cannot see, touch,
feel or physically behold.
Remember the story of the young seagull that didn’t have
faith in it and hence would not try to flap its wings till
its family left it alone. Nearing to death due to
starvation, the gull found itself in a situation where it
had no other choice, but to try to fly. And as soon as it
let itself fall in air and flap its wings, it discovered its
talent of flying.
I too went through a somewhat similar experience. I was
taught driving after I was 18 years old. I passed my driving
test and got a license too. But I feared driving alone. One
day, the driver didn’t turn up and I had a very important
exam in university. Missing it would have meant repeating
the whole semester. There was no one at home who could drop
me. I had to muster the courage to drive the car, alone, on
my own to the university. Though I cursed the driver for not
turning up in time, but after this venture, I got the
required confidence to manage driving on my own.
Endurance, perseverance, and most importantly trust in
oneself are the key to the success of most of the well known
achievers.
Allah is our Creator. He has promised that He will not put
undue burden on any one. He never puts any one in a
situation from which that person is unequipped to rise out.
We only know what we have on us, but our Creator knows what
is in us. We only see the weight and burden we carry but He
knows of our strengths. Our Lord has more FAITH in us than
we do in ourselves. He has best plans for us- the ones that
are for good and not for disaster. So keep your faith. You
can do it!
